Coffee Preparation - Drip Brewing 珈琲-コーヒーのドリップ方法

#0 新鮮な豆を仕入れる
おいしさの80%はここで決定.必ずその日焙煎した豆を販売する店で購入のこと.これ見よがしにガラスケースに大量の豆を陳列してある店などもってのほかである.新鮮な豆は膨らむ.ホントビックリするくらい泡がでる.
#1 コーヒー豆を挽いた後で,渋皮を吹き飛ばす
渋皮はチャフともいう.切り潰した粉をストックに入れ,回転させながら息を吹きかける.
#1 Grinding and Separating the chaff:
Grind coffee beans, next separate the chaff from the coffee grounds.
#2 フィルターをセットしお湯で洗う
#2 When water reaches boil, place the paper filter onto dripper and wash it clean of any bits, oils, papery flavors and impurities.
#3 ドリップ用のお湯を冷ます.適温は90℃.
沸騰したお湯を適温(90℃前後)まで冷ます.珈琲は温度によって抽出成分が変化する.甘み・苦みは低温でも抽出されるが,雑味(えぐ味),渋み,酸味は温度が上がると指数関数的に増加する.一回の天空落としにて 5~10℃湯温が下がる.季節によって落とす高さを変える.
#3 Cooling hot water:
Water temperature is crucial to the proper extraction of flavor from the ground coffee. The recommended brewing temperature of coffee is 90 deg C.
#4 珈琲の抽出
雑味は甘み,苦みに比べて溶解度が低い.
溶け出し難くく溶け出す速度も遅い.
解け出し難さを利用した方法が透過法.
溶解速度の差を利用した方法が浸漬法.
カリタ,ネルドリップは透過法.
サイフォン,パーコレーター,メリタは浸漬法.
#4 Drip brewing:
Sweet or bitter substances are more soluble in water than impurities at 90 deg C. So, the complete drip cycle should happen within 3 to 5 minutes. If the drip cycle is completed in less than 3 minutes, grind your coffee finer. If the drip cycle takes longer than 4 minutes, grind your coffee coarser.
#5 蒸らし
粉全体にお湯を染み渡らせる.
お湯は粉の中央に一気に落とす.蒸らしきれたところでフィルターから数滴珈琲が垂れる程度が望ましい.温度が高いと蒸らした山が噴火する.蒸らし時間は豆が膨らみきるまで(30秒程度).これ以上の時間はNG.
よくお湯を一滴一滴気張りながら垂らして蒸らしをする方がいらっしゃるが,あれは疲れるだけ.30秒以上の蒸らしは雑味成分を増やしてしまうことになる.

#6-1 抽出(透過法)
蒸らしによってコーヒー内の美味成分は飽和している.お湯を細く細く垂らして美味しい成分を飽和させたまま透過させる.狙うは【甘み】と【苦み(善玉)】である.どちらも溶解度が高いため,他の成分より先に溶解し飽和しやすい.お湯を細く淹れることで甘みと苦みを高濃度に保ち,溶解度の低い雑味を溶け出しにくくしながら抽出する.1分半くらいで.お湯はグラウンドに置くように細く,静かに.決して抽出中のコーヒーの泡を乱さないように.手首を返すとお湯が暴れてえぐみが出てくる.
グラウンドの端にはお湯を落とさない.
膨らんだ灰汁が溜まっているから.
抽出時間は蒸らしも含めて3分程度.
これ以上時間をかけると雑味成分が抽出される.
#6-1 Brewing:(permeation process)
Pour hot water over the wet grounds within 3 minutes. The whole process should not exceed 5 minutes.
#6-2 抽出(浸漬法)
美味しい成分と雑味には溶け出す時間に差があり,美味しい成分の方が早く抽出される.必要十分なお湯の量を短い時間に加え,雑味が溶け出す前にさっさと抽出するのが浸漬法.メリタやフレンチプレス,サイフォン,パーコレーターもこの方法.よって,お湯を一気に入れて抽出する.
抽出速度が命.
雑味成分が抽出される前に旨みだけを一気に抽出.
抽出時間は蒸らしも含めて2分程度.
これ以上はNG.

#7ドリッパーを外す
必要な量のコーヒーを抽出したら,お湯が落ちきる前にドリッパーをポットから外す.コーヒー抽出液の上澄みは,灰汁やら雑味やらで一杯である.そいつらが混ざらないようにさっさと外す.もったいないとか思わないように.

フィルターに残ったコーヒーグラウンドの形を観察する
コーヒーグラウンドの形で抽出が上手くいったかどうかの判断ができる.
【透過法】の場合は,お湯をゆっくり注いで高濃度を保つのがポイントだった.だからお湯が落ちきった後のコーヒーグラウンドは盆地の様になだらかに凹んでいるのが望ましい.深い穴が開いていたら失敗.
【浸漬法】の場合は速度が命.お湯をたっぷり注いで,溶解速度の差が遺憾なく発揮されなければならない.よって,お湯が落ちきった後のコーヒーグラウンドはフィルター壁面に薄く張り付いているのが望ましい.アリ地獄のように綺麗な逆円錐型に.平らになっていたら失敗.

Yerba Mate Preparation
Traditional preparation of Yerba Mate

Usually, fill up the mate again and again going through the whole thermo. By that time you might have to reload your mate due to the yerba going lavado (flat tasting). Add various herbs such as: ginger, stevia, chamomile, etc. Sweeten with raw cane, honey, or agave nectar for mate dulce. I prefer it plain, amargo (bitter). Peace&Grace.
